Valentines Shortbread Cookies


Instead of giving your sweetheart the traditional box of chocolates and a card on Valentines Day, try something more creative. 

Here's a delicious sugar-free way to use your essential oils to make an aroma-filled treat your honey will always remember. 



Ingredients:
1 cup and 2 Tablespoons butter, room temperature
1/2 cup baking stevia (Truvia brand)
2 cups flour
1 cup semolina (found in baking isle of grocery store)
2 drops pure peppermint essential oil

Directions:
Beat butter and stevia together until creamy. Sift flour and semolina together, then add to the butter mixture. Mix well. Then add peppermint essential oil. Mix once more.

Gather the dough together into a ball. Put it inside of plastic baggie (gallon size). Refrigerate dough for 30 minutes. 

Later, take the dough out of the refrigerator and let set for 30 minutes. Preheat the oven to 325 degrees. Then cover your baking stone with parchment paper. Find your heart-shaped cookie cutters. Roll your dough out using a floured rolling pin. Using your cookie cutters, punch out heart-shaped cookies from your dough. Space the raw cookies out on your baking stone, four across and three down. 

Bake for 20 minutes. Remove the stone from the oven and let cookies cool for 1 minute. Then using a spatula remove them carefully and transfer to a cooling rack. Cool for 20 minutes, then store them in an air tight container. Enjoy!
