Banana walnut bread has always been one of my all time favorite quick breads. I love it toasted with a light spread of butter. It can be tricky to make as most of us have experienced the fated sunken top that ruins an otherwise perfect loaf of banana bread. I've received many requests for my recipe for Banana Walnut Bread. Below is a recipe that will send you back wanting slice after slice.

3/4 cup unsalted butter
3/4 cup stevia baking blend
4 bananas, mashed
2 large eggs
1 teaspoon vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
3/4 teaspoon kosher salt
1/2 cup buttermilk
3/4 cup walnuts, chopped
Directions:
Preheat oven to 325 degrees. Grease and flour a metal loaf pan. Cream the butter and stevia thoroughly. Add the bananas, eggs and vanilla; beat well. Sift together flour, baking soda and salt. Mix flour mixture into the banana mixture, alternating with the buttermilk. Fold in the walnuts and mix well. Pour the batter into prepared loaf pan. Bake for 60 to 70 minutes, until toothpick inserted comes out clean. Let the bread cool in the pan for 15 minutes before turning it out onto a wire rack to cool completely. Slice and toast lightly. Spread with butter or preserves for an added treat.
